Wachigai Zaza is noodle originally made by Wachigai with a support of Ozawa Noodle Factory in Omachi.

 

It is made of 100% unbleached flour from Nagano Prefecture and not dried.

This method delivers rich flavor of flour and good texture in mouth, and very different from Soba, Udon, or Ramen.
